We were lucky enough to get a booking at Cube for their last service of 2011, wow were in for a treat!
Dario emailed the menu to us 2 days in advance with his notes on the wine parings to consider for the evening. On arrival, we were warmly greeted by the staff and shown to our table. The format of the evening was readily explained to us, there are 3 fixed courses followed by a selection of two "paths" for your dining experience to take (vegetarian or meat), this is then followed by a cheese course and then two deserts. This ultimately gives you a 10 course experience, you also have the option to have all 14 courses at an additional charge, however, I wouldn't recommend it as you won't finish!!
Cube is furnished in a very Spartan fashion, monochromatic with some lovely modern works of art on the walls. It is small, but at the same time cosy and intimate, at full capacity, it could hold a maximum of 30 patrons, I feel that this adds to the allure of Cube as it ensures that service and quality of food is never compromised.
The food preparation, quality, provenance (Dario was immensely proud of how locally he had sourced the majority of his ingredients, this included all olive oil used!!), taste and experience is unrivalled in Johannesburg. The combinations that Dario and his team select might seem strange on paper, (Olive Oil powder or fillet with blue cheese and truffle sauce with blueberries), but they work!
This was truly a magnificent experience and I would recommend it to any "foodie" out there!

There are times and places where food is transformed – a meal becomes a journey, a mouthful creates a inner flutter, and eating becomes a small joy. At Cube Tasting Kitchen, fresh ingredients are transformed by master chef Dario de Angeli’s artistry and culinary creativity, and a moment in time forms – it’s food that makes me smile.
Cube’s “foodie” appeal starts in a menu that’s larger than life: 11 courses, created by 3 master chefs, served over 4 hours. The setting is understated and food takes centre stage as 25 diners sit down to the seasonal set menu. But the promise of a decadent-sounding 11-course meal is no culinary cliché or gastronomic bravado - each tasting course, through 3 starters, 5 mains and 3 desserts, is beautifully crafted and executed.
Cube’s tasting menu is refreshed frequently, and currently features an alternative vegetarian option. Expect variety and the freshest local produce – tasting courses that showcase simple ingredients, brought together with a joyful flair and a light touch of talented chefs. The ingredients themselves are forefront on the menu – “Strawberry Drink. Mascarpone. Balsamico. Basil” belies the complexity of flavour and craftmanship in the deconstructed strawberry tart that initiates the meal. A component gaspacho follows, transporting the palate to a garden bathed in summer sun, while scallops with confit duck in lemon verbena foam resonate with the quayside. A dessert dish simply described as “Cheese. Tomato.” comprises beautifully smooth locally-sourced chevre goat’s cheese on a homemade tomato chutney with pomegranate and pistachio – a delight! Each new course is awaited with anticipation and when revealed, succeeds over and again in surprising the senses. From the unexpected pleasure of tempura banana to a surprising harmony of blueberry, beef and blue cheese, the combinations and craft of each new course revealed are a joy to experience.
Staff are attentive and knowledgeable, with each course introduced by the chefs from Di Angeli’s open plan kitchen. Cube isn’t licensed, but there is an opportunity to bring your own wine with no corkage charged – a recommended pairing is provided by the chef when booking your table. On a too-hot Jozi evening, air conditioning was notably lacking, but even this couldn’t keep me from savouring every moment of the dining experience.
For those who embark on the journey - arrive hungry, and enlist foodie friends to deliberate every delectable course together. Expect food that’s joyful and memorable, reminding you that a great meal is as much about the joy of eating as the craft of cooking.

Visited Cube for the second time last week. New menu is fantastic - with a huge range of tastes and textures. Remains a great treat to be able to bring your own favourite wines without paying any corkage.
